Sandwich Solution
Here’s a simple solution for those of you who have a craving for an old-fashioned sandwich every now and then.
You’ll need:
Your favorite sandwich fixin’s (Meat, lettuce, tomato, bacon, mustard, mayo, etc…)
Two large portobello mushroom caps
A little prep has to go into it.
First, grab a spoon and scrape out the stem and the “gills” from the underside of the mushroom cap. These tend to hold in moisture when you wash them, which gets sloppy when you start to eat.
Wash the cap off, then pat it dry with a towel.
From here you have two options.
Option one: Slather on your condiments, throw on the trimmings, and go for it.
Option two: Drizzle some olive oil, salt, and pepper, then grill it for about 5-7 minutes on each side. Then refer to option one.
I’ve done this as a BLT and a burger. For the burger, I used the Bubba Burgers with the vidalia onions (in the yellow box), a couple slices of bacon, a couple slices of heirloom tomato, and some dark green lettuce.
On a side note, I was having a hard time finding a suitable mayonnaise. I finally found a canola oil mayo in the organic section at Food Lion. It’s pretty darn good.
