Beef and Tomatoes
Here’s another quick and simple meal that’s easy to tweak to your liking.
You’ll Need:
1 pound extra lean ground beef (grass-fed if you can get it)
1/2 a red onion, chopped into large pieces
1 large heirloom tomato, cut into large pieces
1 avocado, sliced
olive oil and balsamic vinegar to taste (about 2 tbsp each for the whole batch)
Brown the ground beef. Set aside.
Saute the onion in olive oil to your liking. (I like them done to the point where they’re still a little crunchy, but the strong onion flavor is gone)
Add the beef to the pan with the onions and mix it together. Then add the tomato.
Continue to cook for about a minute, stirring frequently. You want to heat the tomato, but not to the point where it turns to mush.
Throw some in a bowl, then top with a third of the avocado and drizzle a little oil and vinegar over the top.
This makes about three servings.
For variations, use different ingredients, like ground bison, chicken, or turkey. Lamb works pretty well too. You can play around with spices, different types of onion and tomato, etc. I like to put in a little cumin and chili powder or red pepper flakes to give it a chili-esque flavor.
If you have leftovers the next morning, just throw it in a pan, heat it up a little, and crack a few eggs over the top.
