Banana Bread
This EXTREMELY simple almond banana bread recipe comes courtesy of Melissa Hoff.
Ingredients:
2 cups Almond Meal
1/2 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Ground Cinnamon
2 Large Eggs
2 Medium Bananas
1/4 cup Honey
1 tbsp Vanilla Extract
1/4 tsp Almond Extract (optional)
1/2 cup chopped walnuts (optional)
1/2 cup water (Only if needed)
Preheat oven to 350 degrees.
Mix all the ingredients into a batter.
If the batter is too thick to pour, add the water, a little at a time, until it thins out to the desired consistency.
If you want, add the walnuts last.
Pour into a small baking dish and bake for 30 minutes.
Let it cool before eating it.
You will probably have to serve it out of the baking dish. Nut flours don’t hold together as well as regular flour, so if you try to slip it out of the pan, it will likely fall apart.

Great recipe! I made it this morning with these modifications:
reduced honey by 1 T
added 1 C tart dried cherries
I baked it in a shallow 9×13 pan, which worked very well. I anticipate this will go very well with something salty, like bacon. Mmmmm. Bacon.

Okay, I’m making this tonite.
After looking for somewhere local to buy almond flour, I found a recipe on Crossfit Coastal that it’s simply almonds ground up in a processor. (Hey I’m dedicated but not fast okay?)
